7 Ceviche - Peruvian food is having a moment, with two restaurants opening in London this spring, Ceviche in Soho and Lima London in Shoreditch. Family pets can sleep easy in their hutches though, as Peruvian favourite cuy (roast guinea pig) won't catch on. Peru's second most famous dish, ceviche or citrus cured fish, is also its best, fresh, light and tangy, and so easy to make that chefs will leap to put it on the menu. Barmen, meanwhile, will be reaching for the pisco (Peruvian firewater), and not just for pisco sours - Ceviche restaurant will have a dedicated pisco bar.
